Cantaloupe Rice Bowl
1 cantaloupe cut into small bite sized pieces
3 green onions chopped
1-1/2 tablespoons butter
1 teaspoon white miso
1/2 teaspoon fish sauce
1/4 teaspoon sesame oil
1/4 teaspoon chili oil
2 tablespoons olive oil
2 tablespoons apple cider vinegar
1/2 teaspoon black pepper
1 tablespoon honey, more or less
1 cup rice cooked then cooled slightly
Had some cantaloupe which was hard and decided to make this recipe. I'll make it again. Sauté onions in butter. Add cantaloupe and cook till soft. In a separate bowl mix remaining ingredients except cooked rice. Pour sauce over cantaloupes and cook uncovered till reduced slightly. Serve cantaloupe mixture over cooked rice. Unusual an quick to make.
