Orange Pudding


Orange Pudding

Citrus is in season so I thought I'd make a recipe with oranges.

zest of one naval orange
juice of two naval oranges (need two cups total)
1/3 cup sugar
1/3 cup corn starch
1 tablespoon butter
1/2 teaspoon orange extract (optional)
1 scant drop of red food coloring (optional)
1 scant drop of yellow food coloring (optional)

Zest one naval orange. Juice both naval oranges and strain out pulp. No seeds to contend with in naval oranges. Should have two cups, if not use store bought orange juice. Add orange juice and sugar to a low sauce pan, stir well. Next add corn starch mixed with more orange juice and stir till smooth. Add zest to pan. Add food coloring and orange extract if desired. Cook over medium low heat till mixture thickens. Remove from heat and stir in butter. Pour into a greased glass dish or cups of your choice. Cool, then refrigerate till set. Sprinkle with dried coconut if desired or top with whipped cream just before serving.  Only three ingredients needed. So refreshing and luxurious.
