Ricotta Fritters


Ricotta Fritters

1 shallot chopped fine
2 garlic cloves minced
dab of oil to sauté shallot and garlic
2 large eggs
2 cups ricotta cheese
1/2 cup grated asiago or parmesan cheese
1/4 cup chopped fresh parsley
1/2 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
oil with high smoke point for frying fritters

Sauté shallot till translucent. Add garlic and sauté one more minute and then set aside. In a separate bowl beat eggs till frothy and then add ricotta cheese and mix till smooth. Add asiago cheese and parsley. Next add flour mixed with baking powder and salt. Mix till just blended and set aside for 1/2 hour. Drop by teaspoonful's into 1/2 inch hot oil. Serve with condiment of your choice, sweet or savory. Perhaps over tomato compote or topped with sour cream, even maple syrup. These fritters are so delicious. We're going to have them for breakfast.
