Mint Sauce


Mint Sauce

2 bunches of mint, leaves stripped from stems
3 tablespoon white sugar
half a cup plus a dab more of hot water just boiled
1/4 teaspoon xanthan gum
5 tablespoon white vinegar, I used rice wine vinegar
5 tablespoon apple cider vinegar
1/8 tablespoon salt

Take all the mint leaves which were removed from stems and chop as fine as you can. Add the sugar to the leaves and continue chopping till leaves are more pulverized but not mush. Next add boiling water to a bowl and add xanthan gum and stir till dissolved. Add mint leaves with sugar and both vinegars and the salt. Let steep for 30 minutes or more. Stir once during steeping time. 

We had the mint sauce over lamb chops which happened to be on sale this week. This is an excellent sauce. Might have some more of the sauce with some sweet peas. We shall see.
