Ricotta Apple Pie


Ricotta Apple Pie

I'd call this a cake or pastry, not sure the term pie fits.
2 large tart apples cored and peeled.
Half of one sliced, the rest diced small.
1 cup ricotta cheese, 2 eggs, 1/4 cup milk, 1 teaspoon vanilla extract,
3/4 cup sugar, 2 cups flour, 1 teaspoon baking powder,
and a pinch of salt. 2 teaspoons cinnamon, and
2 tablespoons butter sliced thin.

Butter an 8x8 inch baking dish and set aside.
Mix by hand the ricotta cheese, eggs, milk, and vanilla.
Add in the sugar and mix thoroughly.
Add flour, salt, and baking powder and mix well.
Stir in diced apples. Add mixture to a buttered
8x8 baking dish. Sprinkle with half of the cinnamon.
Arrange sliced apples on top, dot with butter,
sprinkle remaining cinnamon and sprinkle with sugar.
Bake in preheated oven at 350 F for 35 to 45 minutes.
A slice of this and some fresh coffee, just the ticket.
