Base or Crust:
1-1/2 cups gluten free flour
1 cup sugar
1 teaspoon baking powder
1/2 cup baking soda
1/2 teaspoon salt
1 egg beaten
1/2 cup butter, melted
Apple Filling:
5 large tart apples, peeled and sliced into thin pieces
1 tablespoon lemon juice to soak apples to prevent browning
1 teaspoon cinnamon
1/2 teaspoon nutmeg
Topping:
4 tablespoons sugar
2 eggs beaten
1 cup sour cream
1 teaspoon pure vanilla extract
Not sure why they call it an apple slice, it's a mystery to me. But it's definitely worth making. Preheat oven to 360 F. Whisk dry ingredients for the base. Add melted butter and beaten egg. Mix to form a dough and press mixture into an 8x8 or 9x10 inch baking dish. Bake for 12 minutes, remove from oven, and let cool slightly
For apple filling, peel apples and slice very thin. Soak apples slices in water with lemon juice to prevent browning. Drain apples and add cinnamon and nutmeg and toss well. Microwave on 50% power for 10 minutes to soften. After base is cool, place apples over the base evenly.
For topping mix all ingredients and pour over apples. Bake for 30 to 35 minutes. Let cool completely in baking dish and refrigerate for one hour before slicing. Sprinkle top of baked apple with confectioners sugar and a bit of cinnamon. So delicious, my niece said it's the best dessert she's ever had. Of course, she'll get some of this one.
