Modified Caesar Salad
Happy Fourth of July to you all. I have become addicted to what I call modified Caesar salad. I got some fresh romaine lettuce and Spanish garlic at the farmer's market. I break the lettuce into large pieces and smash about three cloves of garlic. To that I add olive oil, a dash of white balsamic vinegar, anchovies chopped fine and shredded Parmesan cheese. I know most folks turn the nose up at anchovies but the saltiness is just wonderful in the salad and they don't taste like fish at all. Oh, it's so good.
