Plantain with Chipotle Dipping Sauce


For a light snack I sliced a plantain and fried the slices in olive oil. When soft and lightly browned I removed them with a slotted spoon and drained them on a paper towel. Then I squeezed a little lime juice over them. I mixed a small amount of mayonnaise with a dash of chipotle hot sauce and drizzled it over the plantains.


This is quick and easy to make. I served the plantains on one of my leaf dishes. My leaf dishes are made with food safe glazes and are microwave and dishwasher friendly. Leaf dishes are available in different colors in my Etsy Shop. Thanks for reading and for all your comments.
