The idea for this recipe is not mine, true confessions. I was researching what to do with fresh figs and saw a video of goat cheese stuffed figs wrapped in prosciutto. The video was made by an elderly old school Italian. Watching the video, it was just like I was in his kitchen; along with his wife commenting in the background. As I am typing this, I can't find the video; darn it all, the couple were so endearing. There are plenty of other similar videos to choose from. The recipe was intriguing, so I decided to delve in with both feet.
I got the soft goat cheese (chèvre), prosciutto, and arugula at wally world. Who knew. This is my second splurge of the week, maybe I should purchase a lottery ticket. I'll need the lottery winnings to cover the cost of my splurges. Preheat oven to 425 F.
Cut off stem end, then cut a criss cross into top of fig and insert some of the goat cheese and wrap with the prosciutto. I found it easy to just use my finger to stuff the cheese into the fig. Place figs on a parchment lined baking she and bake for 10 minutes. Meanwhile add a bed of arugula to a plate and blend olive oil, balsamic vinegar, honey, salt and pepper and whisk it up. When stuffed figs come out of the oven, place on arugula bed and drizzle with balsamic dressing. Heaven sent straight from Italy.
I think this would be really delicious. In face, I just realized, stuff anything with cheese and I'd be happy!
