Roasted Cornish Game Hens & Sweet Taters

Salt and pepper the inside of the hens,
stuff with quarters of lemon and fresh rosemary
rub with olive or avocado oil to get a crispy skin,
then salt and pepper all over the outside.
I put rosemary sprigs and wine or water
 in the bottom to prevent drippings from burning.

Place on a rack in a roasting pan and
bake in preheated oven at 350 F for about 45 mnutes.
The package comes with two hens, we split one
and warm the other the next day for leftovers.
The lemon and rosemary really enhance the flavor.
