These aren't the most appetizing looking when they are cooked
but Garlic Roasted Eggplant is quite delicious.
A little parmasean cheese might improve the look
but not really necessary for my purposes.
Cut the ends off the eggplant
Score the skin lengthwise all around the eggplant
using a fork and be sure to score right through the skin.
Brush front and back of each eggplant slice wiht olive oil.
Yes I'm using a chip brush, don't worry it goes right in the dishwasher.
Spread garlic on one side of eggplant slices.
I just used my fingers to spread the garlic.
