A simple stovetop meal
Baby spinach and mushroom saute
I start by slicing the mushrooms
Next I remove the stems from the spinach
A bit tedious but I don't like the stem mouth feel in the saute
I saute the mushrooms in some butter and olive oil low and slow.
I remove the mushrooms and add the spinach leaves
I stir in two tablespoons of white balsamic vinegar
till the leaves are wilted, I find the leaves wilt better cooked alone.
then I add the mushroom back in and toss gently to blend.
There you have it.
Simple and delicious.
