Vegetable Frittata


Due to the frost we picked all the peppers & tomatoes.
so I decided to make a vegetable frittata.

I sauteed half a red onion, celery, and peppers.
I set those aside and beat 8 eggs
added them to the pan and then sprinkled the vegetables over
the egg mixture and added the cherry tomatoes I had
spinkled all with salt, pepper, and some spices
and topped it all with some grated pepper jack cheese.
Cook on top of stove till edged pull away then bake in oven.

Before preparing the frittata I cut up some red potatoes
and baked them at 350 F till crispy, about 45 minutes.

When the potatoes were done
I put the frittata in the oven to bake for 30 min at 350 F.
The frittata puffed up quite nicely.

Frittata is good for breakfast, lunch, or dinner.
A frittata never disappoints in flavor
and you can add just about any vegetables you prefer.
