From the farmers market last week I got fuji apples.
What to make? I didn't want to make a full blown pie.
Cobbler is easier to make but not much quicker than a pie.
(Be sure to read the last paragraph for changes I'd make).
I had six apples which I peeled and cored with a paring knife.
I then cut the apples into quarters and sliced the quarters into thirds.
To the apples I added:
2 tablespoons lemon juice
1/3 cup brown sugar
1 tablespoon of cornstarch
1 teaspoon of real vanilla
1 teaspoon of cinnamon
1/2 teaspoon ground nutmeg
Toss the ingredients well and put into an oiled cast iron pan.
For the topping:
1-1/2 cups gluten free 1:1 flour
1/3 cup granulated sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon salt
Toss dry ingredients well, then
8 tablespoons cold butter 1/4 inch cubes cut in well, than add
3/4 cup buttermilk (instead I mixed lemon with milk)
1 egg yolk
Mix all ingredients gently and drop by spoonfuls on apples.
Bake in preheated 350 F oven for 40 to 50 minutes
till top is golden brown, cool for 15 minutes before serving.
Serve with a spoonful of ice cream or whipped cream.
I prefer the ice cream when the cobbler is warm.
If I make this again I will use 8 apples and
will cut down the sugar in the apples
and will cut down the amount of topping by 1/3.
There was too much topping for the apples.
About cutting down the amount of sugar: I rarely eat sweets
so I was just not used to the sweetness.
Even Gary said it was a bit too sweet
but that didn't stop him from wanting seconds.
In all fairness fuji apples are considered sweet
so another tart apple may be a better choice.
Yum. I try and cook with tart apples when I can and reserve the sweeter ones to eat 'as is'.
