Found some smoked swiss cheese at the grocery.
I melted it in a wrap rolled up and it was tasty.
So I decided to try it in stovetop smoked swiss cheese macaroni.
It's a winner and it sticks to your bones on a cold day.
This doesn't look very cheesy or smoky but it was.
Next time I'll add some turmeric to bring out the color.
Maybe a sprinkle or two of smoked paprika on top before serving.
Cooking is a process, each time you learn what to do next time.
Melt 1/4 stick of butter on low heat.
Add 3 tablespoons of gluten free flour a little at a time.
Cook for two minutes till smooth. You just made a roux.
Add two cups of milk a little at a time, stirring constantly.
Cook on medium heat stirring constantly till bubbling.
Add some salt and pepper to taste.
Next add 8 ounces of cheese of your choice grated from a block.

Don't use pre-grated cheese it doesn't melt as well.
Add the cheese a little at a time, stirring well till melted.
