Spicy Cranberry Sauce

Spicy Cranberry Sauce - saute 1 shallot chopped & one inch of grated ginger in tsp of olive oil, add 1 tsp fennel seed, anise seed, cinnamon, 1/2 tsp salt, 1/8 tsp red pepper flakes, stir, add 1 3/4 c water & 1 3/4 c brown sugar, reduce to 2/3, then add two 12 oz packs of fresh cranberries cook till pop, remove from heat, taste and add more red pepper flakes if you like, stir in 1c golden raisins & orange rind from one orange, refrigerate overnight or for 4 hours, Enjoy.
