1 egg white whipped till foamy not stiff
1/4 cup maple syrup
1/8 teaspoon dried ginger
1/8 teaspoon cayenne pepper
1/8 teaspoon salt
1/2 teaspoon cinnamon
2 cups of unsalted mixed nut halves
(if you use salted nuts omit the salt)
(if you don't like spicy omit or cut down the ginger and cayenne)
Whip egg whites till foamy but not stiff.
Add maple syrup and spices and STIR till well blended.
Add nuts and STIR being careful not to break up the nuts.
Pour mixture on a cookie sheet lined with foil
with parchment paper on top of that.
Spread the nuts out so they aren't crowded.
Bake them in the oven at 325 F for 15 to 20 minutes.
Watch closely so you don't burn the nuts.
Let nuts sit till maple spice mixture solidifies.
