Seared Yellowfin Tuna

There's a myriad of tuna varieties available and I'm here to say Yellowfin Tuna should definitely be on your radar. Today I'm makng Seared Yellowfin Tuna which I purchased at Walmart. Sprinkle the tuna steaks with salt and pepper, then place in the marinade. Marinade is a couple of tablespoons of sesame oil and soy or aminos mixed together. Marinate tuna for 10 minutes per side.

Assemble a mixture of black sesame seeds, tan sesame seeds, and hemp seeds. You can omit the hemp seeds but they extend the coverage in place of the more expensive sesame seeds and they impart a nutty slightly citrus flavor. Click link to learn about hemp seeds.


Meanwhile I cooked gold baked potatoes and snow peas. After those are ready, I sear the yellowfin tuna in a hot cast iron pan.

While the tuna was cooking I made a quick orange sauce with orange juice and white wine, about half a cup each. When the mixture was reduced and warmed I added a slurry of corn starch, then when thick added a pat of butter to round out the sauce.
Drizzle sauce over the tuna just before serving if you so desire. The sauce is not necessary but why not. Yes the tuna is rare/medium rare. Pease don't ever overcook any tuna, it will be tough and dry if you do.
The yellow potatoes were quite delicious, the brand was Goodness Unearthed distributed by Farm Fresh Direct LLC. Lately some of the potatoes I've purchased have been rather bland and seemed old, but these were a welcome taste of days remenbered from the past. For some reason the Laura Lynn sour cream with the chives had a sweet note but maybe it was the potatoes that were sweet? Of course the snow peas were also a welcome addition, see previous post about how to cook those.
