A few weeks ago I tried making blinis for the first time. It was clear I had some perfecting to do. Click this link to find the recipe for the blinis. Blinis are essentially a mini pancake used to present a gourmet appetizer. This time my blinis were light and fluffy and ready to host a savory appetizer on top.
For Shrimp Blinis make tzatziki and spread on blinis. Top with the middle eastern marinated shrimp. Here is link for the recipe for the tzatziki. The recipe for the middle eastern marinated shrimp is as follows: to one can of medium shrimp, mix coriander, cumin, cinammon, paprika, oregano, fennel seed, mustard powder, ginger, and a tablespoon of lemon juice, and salt and pepper to taste. Marinate the canned shrimp for one hour.
For Eggplant Blinis make eggplant spread and spread it on blinis. For the spread I purchsed some store bought spread. Top spread with ricotta cheese then sprinkle with dukhah. The recipe for the dukhah is as follows: Mix chopped cashew and hazelnuts, chopped coriander seeds, thyme, sesame seeds and fennel seeds.
Both these blinis were delicious and quite unusual in flavor. The blinis were very enjoyable and easy to eat. Sophisticated palletes and unsuspecting guests will love these unusual appetizers. Enjoy!
