Stuffed Spaghetti Squash

Spaghetti Squash is an inexpensive meal and easy to make.
Slice the ends off the squash then cut in half.
Brush squash with olive oil and season as you prefer.
Bake at 400 F cut side down for 45 minutes.
Cutting something round is a challenge and can be
dangerous if the knife slips with your hand holding the squash.
True confessions I cut the squash with a sterilized PVC saw.
If you have a better solution I am open to suggestions.
When cool enough to handle scrape inside of squash
with a fork down to the skin. Reserve skin to stuff.
Grate two cloves of garlic and add one cup of ricotta cheese.

Put spaghetti squash back into the skin shell,
and top with a garnish of your choice.
In this case I had leftover green beans so I added those.
Each squash half could be cut in thirds and serve more folks.
Spaghetti squash is very filling and a meal in itself.
