Found these beautiful Spanish heirloom tomatoes at the grocery.

decided to make Crunchy Herb Roasted Heirloom Tomatoes.

Just look at how beautiful thse tomatoes are when sliced open.
6 tomatoes sliced in half placed on parchment lined baking sheet.
1/2 stick of melted unsalted butter
2 tsp dried oregano
1 tsp dried thyme
1 tsp dried rosemary
1/2 cup fresh parsley chopped
salt and pepper to taste
add herbs to the melted butter, stir to mix well
then add in next two ingredients
1/4 cup grated asiago cheese
1 cup panko crumbs GF
stir to combine
take a tablespoon full of mixture and place in opposite hand
place on top of each tomatoe half pressing to get it to adhere to tomato.
Bake in preheated 325 F oven for 20 to 25 minutes.
Let cool for 5 minutes then serve immediately.
Roasting brings out the naturally sweet flavor of these tomatoes.
Next time I might add a bit of red pepper flakes or cayenne
or perhaps some dijon mustard or basalmic vinegar.
I would also substitute GF bread drumbs instead of panko.
The panko crumbs got a little too crunchy for my taste.
