Spicy Panko Baked Salmon

 

1/2 tsp paprika
1/2 tsp garlic powder
1/2 tsp kosher salt
1/2 tsp freshly ground black pepper
1/8 tsp cayenne pepper
2 tbs brown sugar

1/4 cup panko bread crumbs GF
1/2 cup chopped fresh parsley
2 tbs butter melted

1 tbs dijon mustard
1-1/2 lb salmon fillet with skin

Line a baking sheet with aluminum foil and brush down with olive oil. Cut salmon fillet into serving sized pieces and arrange close together on aluminum foil. Brush each piece of salmon with dijon mustard.

Mix spices and sugar and pat into the dijon covered salmon pieces.

Combine panko bread crumbs, parsley and melted butter and pat mixture over the spiced salmon pieces. Crimp aluminum foil around prepared salmon to keep juices close to the salmon pieces.

Bake in preheated 425 F over for 15 minutes till panko crumbs are browned slightly. Remove from oven and serve immediately. I served the salmon with roasted potatoes. This is an unusual treatment for salmon and quite delicious. The salmon was succulent and delicious. I can imagine substituting this same top treatment with mahi mahi.


If you don't like spicy, just omit the cayenne pepper, although the brown sugar mitigates the spicy cayenne. Enjoy!
