Dry:
1 cup gf 1:1 flour (I used Bob's Mill)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon red pepper flakes
1 cup of chopped nuts medium fine, pecans, walnuts or cashews
Wet:
1 stick of butter room temperature
1 cup shredded cheddar, asiago, or smoked gouda, shredded
milk or half and half to make dough stick together about 1/8 cup
Mix try ingredients together in a bowl. In a separate bowl cream butter. Add cheese, (I used a combination of parmesan, asiago and smoked gouda; I would not use parmesan again) then add in dry ingredients, then stir in nuts. Stir milk in a tablespoon at a time till dough comes together. Roll about a tablespoon and half together to form a ball. Place on a parchment lined baking pan. Don't place to close together because they need room to spread out. I forgot to add the pepper flakes so I sprinkled the flakes over the nuggets before placing them in the oven (better added to batter so they don't scorch). Bake in a 350 F oven for 15 to 18 minutes till starting to brown on the bottoms. Remove immediately from the baking sheet onto a baking rack to cool off. Remove the nuggets carefully since they are fragile till they are completely cool. These cheese nuggets have a slightly crumbly texture and are very scrumptious.
