Need a Snack, try Roasted Potatoes

Preheat oven to 425 F. Cut potatoes into half inch pieces. Cut one half an onion into small pieces, Chop up about a two inch cube of pancetta into half inch pieces.

Place mixture in an 8 by 8 inch baking dish. Toss with olive oil, salt, pepper, oregano, and garlic powder. Bake for 25 minutes. Remove from oven and toss with 1/2 cup fresh parsley and serve warm. So satisfying.
