Stovetop Apple Upside Down Cake

zest of one lemon
1/3 cup sugar
2 eggs
1 tsp vanilla
1/4 cup oil
1 1/2 tsp baking powder
2/3 cup gf 1:1 flour
Mix these ingredients in order listed

3 tbs butter
2 tbs sugar
melt butter on medium heat in cast iron pan
stir in sugar and stir till caramelized

2 crisp apples cored, peeled and sliced to 1/3 inch
juice of one lemon
1 tsp cinnamon
Toss apples in lemon juice so they don't turn brown
Arrange apples over caramelized sugar
Sprinkle apples with cinnamon
Pour batter over apples (my batter was slightly thick)
Cover and cook for 20 minutes on medium low heat
When toothpick comes out clean, cake is done.
Place a plate on top of cast iron pan and flip pan over.
You can see in the photo I didn't get the cake centered.
Oh well, it tastes good just the same.
Here's what the cake looks like while it is baking.
This is a good recipe for hot weather
because you don't have to turn the oven on.
It was moist and delicious.
Could be served for breakfast, just call it an apple pancake.
