Seared Sweet Potatoes, Sausage, and Radicchio
2 small sweet potatoes, baked, then pan seared
1 pound mild sausage cut into bit sized pieces, cooked
1 small head of radicchio, wilted
1/3 cup yogurt
1 tablespoon of red wine vinegar
1 tablespoon molasses or agave syrup
Salt and pepper to taste.
Slice sweet potatoes into coins and bake till soft.
Form bite sized sausage pieces and pan fry till done, set aside.
Pan fry sweet potatoes till seared on both sides, set aside.
Pull radicchio leaves one by one, then tear into bite sized pieces.
Wilt radicchio pieces in same frying pan, set aside.
Mix yogurt, red wine vinegar and molasses or agave.
Smear yogurt mixture on center of plate.
Top with wilted radicchio, then sausage and sweet potatoes.
Surprisingly Gary said he liked this dish.
Might be because he was working for hours on his jeep with a friend.
Turns out replacing axles is more than a one day job.
The radicchio got a little over wilted, it should be it's bright purple color.
Sweet, tangy, bitter all in one dish, perfect combination.
Serves two generously with left over sausage pieces.
