Baking Powder Biscuits GF

Had two for breakfast with butter & orange blossom honey.
Not quite as good as my grandmas but getting close.
Baking with GF flour is a steep learning curve.

Here are the beauties getting ready to bake.

I forgot to take a photo of them fresh out of the oven.
I was making venison stew so was occupied elsewhere.

2 cups gluten free 1:1 flour mix
2 tbs baking powder
1 tsp baking soda
1/2 tsp fine sea salt
6 tbs very cold butter cut into cubes
1 cup buttermilk

Preheat oven to 425 F and place parchment paper on cookie sheet.
Whisk dry ingredients, add very cold butter,
then cut in with a pastry cutter till crumbly & pebbly looking.
Don't use a mixer or food mill,
you want the biscuits flaky and cutting in is the only way to go.
Stir in buttermilk, till just blended.
Pat batter onto floured surface and cut into shapes.
Remix left over dough and do the same.
Brush tops lightly with water and bake for 15 minutes.
Immediately remove from pan and place on drying rack.
I had to rush to get some of these biscuits because
Gary was eating them up very quicly.
