Candied Orange Peel


Candied Orange Peel

6 oranges peeled with a potato peeler
(you can juice these for fresh squeezed afterwards)
1 cup sugar
sanding sugar
water

If your peels have the white pith on them, boil peels in water for 10 minutes to take away the bitter taste from the pith. Drain and do one more time. Drain again and put 1 cup water and 1 cup sugar in pot and when melted, add orange peels in. Bring to a boil, turn down to simmer for 40 minutes. Place peels on a wire rack to cool after tossing them in sanding sugar. I didn't have any sanding sugar so I just let them dry as is. Let peels stay at room temperature for at least 24 hours till they become firm and not so sticky. Yes that is the rind from 6 oranges, apparently it takes a lot of oranges to make and significant amount of candied peels. Good for decoration on cakes, cookies or pies, or for the holidays. For a treat you can dip one end into chocolate. Enjoy !
