Chinese Orange Chicken

 

Chicken Bites:
2 large chicken breasts cut into bite sized pieces
2 eggs beaten
1/3 cup gluten free flour
1/3 cup potato starch or corn starch
1/2 tsp fine sea salt
1/4 tsp freshly ground pepper
peanut oil for frying

Orange Sauce:
1 cup orange juice
1/2 cup granulated sugar
2 garlic cloves micro minced
1 inch fresh ginger micro minced
2 tbs rice or white vinegar
2 tbs soy sauce or aminos
1/2 tsp fine sea salt
1/4 tsp red pepper flakes
1/4 tsp freshly ground black pepper
2 tbs corn starch mixed with water to dissolve
2 tbs butter
2 tbs orange liqueur (optional)
orange zest from half an orange

Garnish:
1 scallion sliced finely on diagonal
orange zest from half an orange
1 tbs sesame seeds
2 slices of cara cara orange

Rice:
1 cup white or brown rice
2 cups water
1/2 tsp fine sea salt
I used turmeric but next time I'll leave the rice natural


Cut chicken breasts into bite sized pieces. Dip in beaten eggs and then dredge in flour starch mixture and place on parchment lined pan to dry out. Start your rice (it will keep warm after it's cooked). Prepare your orange sauce adding corn starch at the end to thicken. Then take off heat and melt butter and orange liqueur and set aside. Prepare your garnishes. Meanwhile heat peanut oil in frying pan and when very hot cook chicken bites in batches without overcrowding them. Put chicken bites in a bowl. Pour orange sauce over chicken.

Plate rice and orange chicken and top with garnishes and serve immediately. My chicken didn't get very brown but it was cooked perfectly. I'm always reluctant to get oil too hot. Guess I'm kind of squeamish about frying food. The orange sauce was delicious over the rice too. Enjoy !
