1 small spaghetti squash
5 oz smoked cheese grated (I used smoked white cheddar)
1/4 cup half and half
2 minced garlic cloves
1 tsp dried thyme
1/2 tsp fine sea salt
1/2 tsp fresh ground pepper
1/4 cup GF bread crumbs (optional)
fresh or freeze dried chives for garnish
Cut squash in half crosswise. Scoop and toss out the seeds and pith. Bake at 350 F in glass baking pan with one inch of water cut side down for 30 to 45 minutes. Let cool for 15 minutes. Mix grated cheese (reserve a quarter cup for topping), half and half, minced garlic, salt and pepper in bowl then add spaghetti squash to bowl. Toss well to meld the ingredients and return mixture to both squash shells. Top with reserved grated cheese (and GF bread crumbs if desired). Bake for 15 more minutes on a parchment lined pan. Remove from oven and sprinkle with chives and serve immediately. If using a medium or large spaghetti squash increase grated cheese to 7 ounces. Enjoy !
