Cherry Tomatoes & Eggplant
What to do with all those cherry tomatoes?
Put them on eggplant slices and bake.
Slice your eggplant in 3/8 inch slices.
Score the eggplant flesh with a fork on both sides,
then brush with olive oil & micro-planed garlic.
Cut your cherry tomatoes in half and place on top of eggplant.
Bake in 350 F oven till tomatoes are crinkly about 30 minutes.
Put a dollop of cheese or sour cream if you wish.
Enjoy !
