Creamy Chili Lime Corn

 
Creamy Chili Lime Corn

4 ears of fresh corn, shucked and kernels removed
3 tablespoons unsalted butter
1 yellow onion chopped fine 
1 lime zested and juiced
3 cloves of garlic, minced
2/3 cup heavy cream
2 teaspoon chili powder
kosher salt and pepper to taste
fresh cilantro or parsley
1 tablespoon chopped chives

Melt butter, add onion and sauté till translucent. Next add corn kernels and cook till they get some char on them, about 10 minutes. Add minced garlic cloves, cook for one minute, then add the lime juice. Next stir in cream, chili powder, salt, pepper, and lime zest. Cook another 5 minutes till corn absorbs cream and mixture becomes somewhat thick. Remove from heat and stir in cilantro or parsley, and chives. Serve with some corn chips. Oh my, this is so delicious and a welcome change from the usual corn dishes.
