Drying Rosemary


Drying Rosemary

You may recall all my rosemary was killed this past winter
with the extremely cold temperatures.
When I say all, I mean I had at least 8 huge rosemary,
what blow to my herb gardens.
I was pleasantly surprised when I saw the
Farm at 180 had rosemary for sale.
I got a bunch and am drying the rosemary on cookies sheets.
Most herbs will dry just fine on cookies sheets;
I prefer that method to a dehydrator or the oven
since I think the herbs flavor is maintained much better.
When the stems are good and dry 
I'll strip the needles off with gloves and dry it even more.
Later I will grind the stems in a coffee grinder
which I keep for grinding herbs.
Ground rosemary is good for sprinkling over chicken,
breads, vegetables, and so much more.
No more of those prickly needles unpleasant in the mouth.
