Ricotta Bombs


Ricotta Bombs

Not sure why they call them bombs,
they are light and fluffy.
Recipe called for chopped olives,
didn't have any so left them out.

1 cup ricotta cheese
2 eggs
2 tablespoons of capers, drained
4 cherry tomatoes chopped
salt and pepper to taste

Whisk ingredients lightly,
then oil muffin tins.
Bake in 375 F oven for 20 minutes.
Makes six bombs. Nice for breakfast or brunch.

Oiling muffin tins never seems work best for me.
Perhaps you have the secret?
