Citrus Glazed Grilled Salmon

 
Citrus Glazed Grilled Salmon

1 cup fresh orange juice
1/4 cup chicken stock or water
2 minced garlic cloves
2 tablespoons orange marmalade
2 tablespoons soy sauce or amino
1 tablespoon rice wine vinegar
1 tablespoon butter
1 tablespoon brown sugar
couple of dashes of ground ginger
couple of dashes of hot sauce (I use Chohulu sweet habanero)
pinch of salt and freshly ground black pepper

4 salmon fillets
olive oil or grapeseed oil for frying or grilling

1 cup brown rice cooked
1/2 teaspoon turmeric added to rice water
1/2 teaspoon salt in rice water

4 servings of asparagus steamed

Cook orange sauce till thick. Meanwhile steam asparagus. When both are done fry salmon till done. Don't overcook salmon. Serve and pour sauce over the salmon. Enjoy !

  1. Ooh goodie, I just bought a salmon fillet, and have the ingredients for that sauce. May have other green veggie though. Fun in the kitchen tonight!

    1. HI Barbara, thanks, you can cut down the amount of each ingredient in the sauce to make less if only one fillet, I used a whole slab of salmon I got at Aldi and we have left overs for several days and I don't have to cook.
