2 small heads of broccoli cut into small florets
1/2 yellow onion chopped fine
6 tbs unsalted butter separated
3 tbs gf flour
6 oz smoked gouda grated
1-1/2 cups hot milk
salt and pepper to taste
1/2 cup gf bread crumbs
Pre-steam the broccoli florets till al dente and set aside. Preheat oven to 350 F. Sauté onion in 2 tablespoons of butter till soft. Add 3 tablespoons of gf flour to onion mixture and cook for 2 minutes. You might have to add a little more butter to keep it soft and not dry. Don't let flour mixture burn. Add hot milk to mixture a little at a time. Add grated cheese by handfuls till melted in the milk mixture. Add salt and pepper to cheese mixture. Butter an 8x8 or 9x9 inch baking dish. Add small amount of cheese mixture to bottom of buttered dish, then pour in pre-steamed broccoli. Drizzle remainder of cheese mixture over the top and move broccoli florets slightly to be sure cheese mixture penetrates all through the broccoli. Melt remaining butter in saucepan and add bread crumbs and sprinkle those over the casserole. Bake for 20 minutes or until top is golden brown. Watch closely so casserole doesn't get too brown. Let casserole sit to cool off a bit before serving since hot cheese and/or moisture laden broccoli can easily burn you mouth. Enjoy !
