Chocolate Truffle
Here is a picture perfect chocolate truffle
from Michaelee's Restaurant in Blairsville.
I saw a post on fb and just had to have one.
Gary went and purchased a couple for both of us.
Much to my chagrin the interior was filled with almond butter.
Needless to say it was not what I was expecting.
I've been looking for an truffle interior filled with chocolate.
Don't get me wrong, it was delicious but not what I desire.
Looks like I'm going to have to learn how to make my own truffles.
I've been perusing youtube videos and have my heart set on
perhaps a coffee chocolate filling, maybe a brandy chocolate filling.
Chocolate is not an easy ingredient to work with
especially when dealing with a chocolate ganache.
I am gathering my courage to delve into authentic truffle making.
It might not happen right way, but I vow to attempt it soon.

Be warned, it can become an obsession. One of my nephews spends a LOT of time making truffles. And the family benefits.
