8 medium potatoes (your choice) peeled and chopped small
1/2 cup half and half
4 tablespoons butter
2 small heads of broccoli cut into small florets
1 tablespoon butter to grease 9 x 12 inch casserole dish
1/2 cup grated cheese, your choice
1/4 cup bread crumbs
salt and pepper to taste
Place potatoes in a pot with cold water, bring to boil, and cook till they are fork soft. Drain then mash potatoes and blend with hand held mixer, adding half and half and butter a little at a time. Steam broccoli till soft. Fold broccoli florets into mashed potatoes. Grease 9 x 12 inch casserole dish with butter and add potato mixture to casserole dish.
Sprinkle grated cheese on top and then sprinkle with bread crumbs. Bake at 350 F for 30 to 40 minutes till edges start to brown. Remove casserole from oven and let sit for 10 minutes before serving. Casserole can be prepared day before and baked the next day. If doing so, let casserole come to room temperature before baking. Serving this casserole is one way to get folks who don't eat vegetables to do so. Enjoy !
