1-2 whole fresh pompano, gutted and cleaned
1 large bunch of fresh dill
1 lemon sliced crosswise
Fish Marinade:
2 tablespoons olive oil
1 teaspoon of thyme
1 teaspoon of paprika
1 teaspoon of garlic powder
1 teaspoon of ground ginger
1 teaspoon of ground cumin
1 teaspoon of ground coriander
1 teaspoon of salt
1/2 teaspoon of freshly ground pepper
Potatoes:
2-3 cups of quartered mini yellow potatoes
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
1/2 teaspoon dried dill
2 lemons sliced crosswise
Preheat oven to 375 F. Prepare potatoes and toss in 9 x 12 baking dish with olive oil, herbs, seasonings, and then lay lemon slice over the top. Pre-bake potatoes for 20 minutes. Prepare fish marinade and stir well. Meanwhile prepare whole pompano with slices across both sides of meaty side of the fish. Drizzle marinade over fish making sure to force marinade into the slices you have made in the fish. Insert fresh dill and lemon slices into cavity of fish. Remove potatoes from oven and place prepared pompano on top and place back in the oven and continue to cook for another 20-30 minutes depending upon the size of the fish. Internal temperature should be 145 F.
Oh my word, pompano is so delicious and the potatoes were good because the lemon flavored them as well as the fish.
