Fried Frog Legs with Roasted Parsnips


Fried Frog Legs and Roasted Parsnips

Obviously the peanut oil wasn't hot enough.
The frog legs were good but not crispy at all.
They were soaked in buttermilk overnight
patted dry and dredged in flour before frying.
The roasted parsnips were delicious.
Cut the parsnips into uniform thick pieces,
toss in olive oil, salt, pepper, parsley, and thyme
 and roast at 400 F for 30 minutes.
The sauce was leftover aji amarillo pepper sauce.
By the way, peanut oil is much less expensive at Foodland,
and they had whole peppercorns so I can grind my own.
Neither could I find at Ingles.
