1 medium onion chopped fine
3 stalks celery chopped fine
1 bell pepper chopped fine
1 container of no salt added chicken stock
1 cup water
4 potatoes peeled and chopped into bite sized pieces
1 tablespoon tomato paste
1 tablespoon balsamic vinegar
2 tablespoons sherry wine
1 tablespoon worchestershire sauce
1 teaspoon dried parsley
1 teaspoon dried cumin
1 teaspoon dried rosemary
1/2 teaspoon garlic powder
1 teaspoon paprika
salt and pepper to taste
Sauté first three ingredients till soft then add remaining ingredients.
Simmer till potatoes are soft and flavors are melded.
Adjust seasonings and serve.
What makes it thick? Letting it cook down.

Our vegie soup is so thick we call it stoup (a mix between soup and stew). We love it and add a lot more vegies than you did in this one.
