Shrimp Scampi over Brown Rice Noodles


Shrimp Scampi over Brown Rice Noodles

Peel and devein medium sized shrimp. Keep refrigerated till ready to cook. Sauté approximately 8 ounces of button mushrooms till just barely cooked. Set aside in a separate bowl.  Sauté one small shallot till soft, then add one clove of micro-minced garlic and continue to sauté for one more minute. Set pan aside off the heat. Boil salted water for your noodles; they take three minutes to cook or soak. Add your shrimp to the pan with the shallots and garlic on medium high heat, add salt and pepper to taste, a dash of red pepper flakes, and sauté till just barely cooked through. Add 1/3 cup of wine to deglaze pan and add mushrooms back into pan. Drain noodles, toss or top with shrimp scampi and serve immediately. Spoon pan juices over the noodles if there is any left in the pan. Sprinkle with fresh parsley. Parsley is growing in a downstairs raised vegetable bin and I'm upstairs, next time.
