GF Banana Bread


GF Banana Bread 

3 to 4 medium overripe bananas, mashed (1-1/2 cups)
1/3 unsalted butter melted
3/4 cup granulated sugar
1 large egg beaten
1 teaspoon pure vanilla or rum extract
1-1/2 cups gluten free flour
1 teaspoon cinnamon
1/4 teaspoon allspice
3/4 teaspoons baking soda
3/4 teaspoons baking powder
1/2 teaspoon salt

    Preheat oven to 350 F. Mash bananas, add beaten egg, vanilla extract, and granulated sugar. Melt unsalted butter, let cool then add to wet ingredients. Measure dry ingredients and whisk till combined. Add dry ingredients to wet ingredients and blend till just combined. Mixture will be lumpy due to bananas.
    Prepare a 9x5 inch loaf pan with grease and then line with parchment paper for ease of retrieving bread after it is baked. Pour batter into the loaf pan and place in oven and bake for 45 to 60 minutes till toothpick inserted in center comes out clean. Cool bread on a rack for 15 minutes and then turn out and allow to cool completely. Looks like a few slices are missing from the loaf, not sure how that happened. It didn't rise as much I would have liked, perhaps I had too much banana, I used four. It was real tasty none the less.
