Dorado Fish cooked in Ceramic Poacher

I had a whole dorado fish and planned to poach it whole in my ceramic poacher. This was kind of a mish mash of leftovers and other ingredients. I oiled my ceramic poacher interior and cut up one stalk of celery and one shallot and put it into the bottom of the poacher.

I added 1/2 cup of orange juice and leftover puttanesca sauce. Then I added a little stone ground mustard, Worcestershire sauce, and oyster sauce. I baked it, starting in a cold oven, at 400 F for 30 minutes. When the fish was cooked through I turned down the heat to 350 F and added a casserole dish of olive oil tossed chopped okra. Not bad for a quick meal.
