1 tablespoon olive oil to sauté
4 green onions chopped fine
1/2 half red bell pepper chopped fine
2 inch piece of fresh ginger micro minced
3 garlic cloves micro minced
2 cups cooked red rice or other long grain rice to substitute
5 eggs beaten lightly
This is the rice I cooked for the salmon head stir fry in the previous post. Pre cook the rice and let cool. Also pre cook the asparagus till al dente and set aside. Sauté the green onions and then add the red bell pepper and cook till soft. Add the ginger and last the garlic. Toss in the rice and warm thoroughly. Next add the beaten eggs into the center of the rice, stir quickly till cooked through and serve immediately. Don't limit yourself to what I have listed, just use up what you have on hand. I had all these ingredients in my fridge so this is what I decided to make. Quite tasty.
