Salmon Head Stir Fry

Please don't be squeamish at seeing the fish heads.
Do not, I repeat, do not throw out fish heads.
First time using a salmon head and it is so delicious.
Apparently the head has loads of collagen and tons of flavor.
I cut the salmon head in half (just shy of the middle)
marinated it and then cooked it in its own marinade.

I served it over a bed of mixed greens.
I did make some red rice but completely forgot about the rice.
I can't tell you how delicious the meat in the head is.
Moist, succulent, and oh so delicious.
Yes there is a little bit of cartilage in there but worth the trouble.
Waste not, want not.
