Patagonian Sea Scallops with Red Rice

I happened to see wild caught Patagonian sea scallops, at wally world of all places, and decided to try them.

Oh my, tender and sweet.


Decided to serve them over a bed of red rice.

Drain and rinse the scallops, pat completely dry, then
generously salt and pepper the scallops and set aside


Sauté some mushrooms in oil and butter and set aside.
Prepare a few accoutrements for the dish.
I gathered capers, fresh thyme, and green onions.
Later I added minced garlic and orange juice.


Add the scallops and accoutrements and cook on medium.
I think one ingredient could have been left out, not sure which.
Perhaps the orange juice because the capers added enough acidity.
Still and all they were very tender, sweet, and delicious.
