1 cup polenta, (course yellow corn meal)
3 cups water
3/4 cup heavy whipping cream
3/4 cup grated white cheddar cheese
2 tablespoons butter
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
2-4 dashes of hot sauce
6 thin sliced bacon cooked al dente and chopped medium
1 lb shrimp peeled & deveined, I had a large size, smaller might be better
4 scallions (green onions), chopped fine
About the same as shrimp and grits but polenta is supposed to be coarser than grits. I don't find it so. Have you looked at the grocery store? So many corn meal mixes but not one package labeled grits. Pre-cook bacon, chop, then set aside. Cook polenta by boiling water and adding polenta a little at a time and whisking to prevent lumps. When polenta starts to thicken, cover and cook for 30 minutes watching closely so it doesn't burn. Add in butter and grated cheese, and more cream if need be, and remainder of ingredients and stir till blended. Set aside. Sauté shrimp in bacon grease, add green onions, then chopped bacon pieces to rehydrate them. Serve over the polenta.
