
Herbed Ricotta Potato Crisps
This is an easy appetizer. Slice one of more russet potatoes 1/4 inch thick. You can peel the potatoes of not. Toss in olive oil, salt and pepper and herb of your choice. Place on parchment lined cookie sheet. Bake in 400 F oven for 20 to 25 minutes. While potatoes are baking add fresh finely chopped herbs into ricotta. Let potatoes cool slightly and place a dollop of herbed ricotta. Quick and easy.
