Truffle Goat Cheese & Smoked Salmon
Appetizer Wrap Rolls

One day Gary came home with some truffle goat cheese.
I've never even had a truffle much less in goat cheese.
Finally I decided to pair it with some smoked salmon
in a gluten free wrap that I cook on top the stove.


I melt a dab of butter in the frying pan,
add the wrap then dot with the cheese,
and add pieces of smoked salmon.
I cover the pan and when the cheese gets melty,
I remove it from the pan, roll it up,
then I cut it up into bite sized pieces.
A little appetizer if you will.

I didn't think I'd be able to detect the truffle
but I definitely could. Truffles are very earthy tasting.
Gary said he didn't care for the truffle flavor,
but he liked the smoked salmon.
I definitely liked the truffle cheese.
It was totally decadent.

First of the Season - Lady Peas

When 7M Farms posted they'd have fresh shelled lady peas on Wednesday, I made plans to get there at opening to get some. I got a bag for us and one for my nephew and niece. They've never had lady peas; they are in for a treat. I've posted about lady peas many times before and you can do a search on the right hand side of my blog to see the various times I've cooked them. I make the lady peas different every time. Why not, variety is the spice of life. My niece might not be able to use them right away so I discovered they can be blanched and cooked later. Get you some lady peas, they are the most creamy, soft, sweet, field peas you can eat.

I rendered one half pound of bacon, then added one chopped yellow onion, 2 minced cloves of garlic, then 4 large roma tomatoes chopped, 3 cups of water, one pound of lady peas, one teaspoon of dried thyme, one teaspoon herbs de provence, salt and pepper to taste. It takes about one hour to cook on top of the stove. Gary raved about the peas, they were that good.

One Dead Crow


One Dead Crow

A local farm had a real dead crow displayed in their field
I happen to revere crows, they are very symbolic
for Native Americans and in many cultures.
Every living thing on earth should be revered, even crows.
I understand wanting to protect your crops
but rather then bragging about a deceased crow
and talking about when to replace with another dead crow,
there are actually crow decoys which can be purchased.
Of course I got blocked and my comments were deleted.
Still doesn't make it right to have a real deceased crow in your field.
No, I can't patronize your business because if I did
all I'd be able to think of was that one dead crow.
Will I make a dent in their business, of course not,
but I'll still stand with the crow every time.

Ahi Tuna, Dipping Sauce & Green Beans


Ahi Tuna, Dipping Sauce & Green Beans

I patted the tuna dry and pressed it into a mixture of
black and tan sesame seeds.

I cooked the tuna in a very hot frying pan, flipping it once.
For the sauce I used aminos, hot sauce, mustard and sesame oil.
I made the green beans the same as the last time
but I used yogurt instead of cream.
